Nutraceuticals and Functional Foods Graduate Program visited Kad Kokoa

On Thursday, October 10, 2023, from 09:00 A.M. to 12:00 P.M., graduate students in M.Sc. Program in Nutraceuticals and Functional Foods (International Program) at the Faculty of Pharmacy, Mahidol University, led by Asst. Prof. Dr. Pattamapan Lomarat, Acting Deputy Dean for Planning and Quality Development, and the Program's lecturer, visited Kad Kokoa. This successful Thai enterprise specialized in crafting functional chocolate products with a strong emphasis on sustainability, supporting local Thai farmers, adding value to domestically produced cacao, reducing imports, lowering carbon footprints, and promoting environmental responsibility.

Mr. Natree Maleephet, the knowledgeable F&B Manager, shared his expertise and experience in bean-to-bar craft chocolate production. Students had the opportunity to participate in hands-on activities, learning about both thermal and non-thermal processing methods for functional foods. This practical experience allowed them to understand how to produce high-quality functional foods that preserve beneficial bioactive compounds. This visit was part of the PYFC 611 Processing of Functional Foods course.

Through this activity, students gained valuable knowledge, insights, and hands-on experience that can be applied to their future endeavors. The visit also aligned with several Sustainable Development Goals (SDGs), including: Goal 3: Good Health and Well-being, Goal 8: Decent Work and Economic Growth, Goal 9: Industry, Innovation, and Infrastructure, Goal 12: Responsible Consumption and Production, and Goal 15: Life on Land.
